Why Sourdough Baked Brie?

The magic of this recipe lies in the incredible synergy between two humble ingredients: sourdough bread and brie cheese. Sourdough brings a unique tang and a wonderfully chewy texture with a crisp crust that holds up perfectly to the melting brie. Unlike other breads, sourdough’s robust flavor complements the rich, buttery notes of brie without overpowering it. The crust forms a protective, edible bowl, while the interior becomes soft, creating perfect dippers for the luscious cheese.

The Irresistible Appeal of Baked Brie

Baked brie is a timeless appetizer for good reason. When warmed, brie transforms into an incredibly creamy, spreadable delight with an even more pronounced earthy flavor. Encasing it in a bread bowl not only makes for a stunning presentation but also provides an instant serving vessel. As guests pull apart chunks of crusty sourdough, they scoop up generous amounts of melted brie, creating an interactive and highly satisfying culinary experience. It’s the kind of dish that disappears quickly from any party spread.

Essential Ingredients for Perfection

Crafting the perfect Sourdough Baked Brie requires just a few quality ingredients. Here’s what you’ll need and how to choose the best ones:

  • Sourdough Loaf: This recipe calls for 1 fresh, large round loaf of sourdough bread. The quality of your bread is paramount, as it forms the edible container and a significant part of the flavor. We highly recommend visiting a local bakery or the bakery section of your grocery store for a high-quality, freshly baked loaf with a good, sturdy crust. A round loaf works best for forming the central pocket for the brie.
  • Brie Cheese: We typically use an 8-oz. wheel of brie, as this size fits comfortably within most standard sourdough loaves. You can use double or triple cream brie for an even richer, more decadent result. Ensure it’s cold when you begin, as this makes rind removal much easier.
  • Shredded Italian Blend Cheese: While optional, a cup of Italian blend shredded cheese (like mozzarella, Parmesan, asiago) is used for an extra layer of salty, savory flavor and to help create that beautiful, irresistible cheese pull. It also adds a slight barrier between the brie and the bread, contributing to the overall texture.
  • Fresh Herbs and Spices: We keep things simple and elegant with fresh thyme, salt, and pepper. Fresh thyme adds an aromatic, earthy note that perfectly complements the rich brie. You can experiment with other herbs like rosemary or chives if you prefer.
  • Olive Oil: A drizzle of good quality olive oil over the bread pieces before baking helps achieve that golden-brown, crispy perfection.

Creative Variations and Flavorful Substitutions

One of the best aspects of Sourdough Baked Brie is its adaptability. Feel free to experiment with these variations to customize it to your taste or occasion:

  • Sweet Toppings: For a delightful sweet and savory contrast, consider adding a thin layer of fruit jam or preserves directly on top of the brie before baking. Fig jam, raspberry jam, or apricot preserves are classic pairings. A drizzle of honey or maple syrup after baking can also be exquisite.
  • Savory Toppings: Enhance the savory profile with additions like caramelized onions, roasted garlic cloves, a spoonful of pesto, sun-dried tomatoes, or even a sprinkle of crumbled cooked bacon. For a spicy kick, a dollop of pepper jelly works wonderfully.
  • Bread Alternatives: While sourdough is highly recommended for its flavor and structure, you can experiment with other types of bakery loaves. A rustic country white bread, ciabatta, or a sturdy whole wheat bread could offer unique taste and texture variations. Just ensure the loaf is round and robust enough to hold the melting cheese.
  • Other Cheeses: If brie isn’t your preferred choice, or you’d like to try something different, a wheel of Camembert works beautifully as a direct substitute. For a tangier profile, a firm goat cheese (though it may not melt as smoothly) could also be considered, perhaps layered with some softer cream cheese.
  • Vegan Option: To make this dish plant-based, simply swap the brie cheese with a high-quality dairy-free brie alternative. Many excellent options are available today that melt beautifully. Ensure the sourdough bread you choose is also vegan (most are, but always check the ingredients).

Frequently Asked Questions About Sourdough Baked Brie

Can I prepare this brie bread bowl ahead of time?

Yes, absolutely! You can assemble the dish up to 24 hours in advance. After preparing the loaf with the brie and toppings, cover it tightly with plastic wrap and refrigerate. When ready to bake, remove it from the fridge about 30 minutes before baking to allow it to come closer to room temperature, then bake as directed.

Can I reheat leftovers?

Yes, leftovers can be reheated. Simply warm individual slices or smaller portions in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through and the cheese is gooey again. Avoid microwaving, as it can make the bread soggy.

Can I use double cream brie for this recipe?

Yes, any wheel of cheese in the brie family works wonderfully for this appetizer. Double cream and triple cream brie varieties are particularly excellent choices as they melt into an even creamier, more luxurious consistency.

Is the rind of the brie edible?

Yes, the rind of brie cheese is completely edible and safe to consume. It contributes to the cheese’s unique flavor and texture. However, for a smoother, more uniform melt in this baked application, we recommend carefully slicing off the rind before baking. This ensures a consistent, creamy texture throughout the melted cheese.

How do I prevent the bread from burning while the brie melts?

Baking at 400°F (200°C) for 30 minutes is usually sufficient to get a golden-brown crust without burning. If you notice your bread browning too quickly, you can loosely tent the loaf with aluminum foil for the last 10-15 minutes of baking. Also, ensure your oven rack is in the middle position for even heat distribution.

Storage and Reheating Tips

Proper storage is key to enjoying any leftovers. Store any leftover baked brie in bread in an airtight container in the refrigerator for up to three days. For longer storage, you can freeze individual slices or smaller portions in airtight containers or freezer bags for up to one month. When reheating from frozen, allow it to thaw in the refrigerator overnight before warming in the oven. Always reheat until heated through and the cheese is once again gooey and inviting.

Elegant Serving Suggestions

This decadent baked brie in bread is a showstopper on its own, but pairing it with complementary accompaniments can elevate the experience even further. Serve it alongside a selection of fresh fruits like crisp apple slices, juicy grapes, or sweet berries. A scattering of nuts, such as candied pecans or walnuts, adds a delightful crunch. Don’t forget an assortment of artisan crackers or additional crusty bread slices for those who want extra dipping options.

For a sophisticated touch, pair this rich appetizer with a crisp white wine, such as a Chardonnay, Sauvignon Blanc, or a light-bodied sparkling wine like Prosecco. Red wine lovers might enjoy it with a lighter Pinot Noir. Alternatively, a craft beer with malty notes can also provide an excellent counterpoint to the creamy cheese. This dish is perfect for holiday entertaining, game nights, or simply a cozy evening at home with loved ones.

Ingredients

  • 1 large round sourdough loaf
  • 8 oz. wheel of brie, rind removed
  • 1 cupItalian blend shredded cheese, mozzarella, parmesan, asiago, etc.
  • 1 tablespoon fresh thyme, de-stemmed and roughly chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons olive oil

Optional Toppings

  • Crispy onions, we used these and you can find them on amazon
  • Fresh Thyme

Instructions

  1. Preheat your oven to 400ºF (200°C). Lightly spray a large, oven-safe casserole dish or baking sheet with cooking spray to prevent sticking.
  2. Carefully cut a circular hole in the top center of the sourdough loaf. The hole should be slightly larger than your 8-oz. wheel of brie. Make sure to cut the center of the loaf out at a slight angle, aiming to keep the top of the bread intact like a lid. This angled cut will make it easier to replace the “lid” later.
  3. Once you’ve removed the top section, slice off some of the excess bread from the underside of the sourdough top. This is often necessary because the angled cut can create a cone shape; trimming it flat ensures the lid sits nicely. Set this excess bread aside.
  4. Within the sourdough loaf itself, hollow out the middle to create a cavity approximately 3 inches deep and wide enough to snugly fit the brie wheel. Be careful not to cut through the bottom or sides of the loaf. Do not discard the removed bread chunks, as they will be baked alongside for dipping.
  5. Sprinkle about ½ cup of the Italian blend shredded cheese into the bottom of the hollowed-out sourdough loaf. This creates a flavorful bed for the brie and helps prevent it from sticking. Then, gently place the brie wheel (with the rind removed) on top of this cheese layer.
  6. Sprinkle the remaining shredded Italian cheese mix over the brie cheese. Finish by sprinkling the salt, pepper, and fresh thyme evenly over the top of the cheese. These seasonings will infuse the brie with delightful aromatics as it bakes.
  7. Carefully replace the top “lid” of the sourdough bread over the filled cavity.
  8. Place the prepared sourdough loaf into your greased casserole dish. Arrange any pieces or chunks of bread that were removed from the center of the loaf around the main loaf in the casserole dish. These will become crispy dippers.
  9. Drizzle the entire loaf and the surrounding bread pieces with olive oil. This will help them turn golden and crispy. Place the casserole dish into the preheated oven and bake for 30 minutes, or until the bread turns a beautiful golden brown and the cheese inside is visibly melted and bubbly.
  10. Carefully remove the casserole dish from the oven. Using oven mitts, gently lift off the top of the bread loaf. The brie cheese should be wonderfully bubbly, molten, and irresistibly delicious.
  11. To create the “pull apart” effect, use kitchen shears or a sharp serrated knife to cut 1-inch slices around the outside of the sourdough loaf, extending from the center cavity outwards but not fully detaching the pieces. This makes it easy for guests to pull off individual portions of bread with gooey cheese attached.
  12. For a final flourish, sprinkle with additional fresh thyme and serve immediately while the cheese is warm and melty. Enjoy!

Tips & Notes for a Perfect Bake

  • Cheese Choice: You can use any Italian blend of shredded cheese that you’d like. The combination of mozzarella, Parmesan, and Asiago adds a depth of flavor, a pleasant saltiness, and gives you that gorgeous cheese pull when you take the top off the brie. Don’t skip this layer!
  • Optional Crispy Toppings: We used crispy onions from a local coop to top the melted brie cheese. Something similar to these can be found on Amazon or at specialty grocery stores. Alternatively, you can finely mince a shallot or half an onion and sauté it until golden and fragrant while the brie is baking, then spoon it over the melted cheese for a fresh, savory topping.
  • Rind Removal: We highly recommend slicing the rind off of the brie wheel before placing it in the bread. Use a very sharp knife to carefully trim away the white rind. This ensures a smoother, creamier melt and eliminates any potential bitterness from the rind, especially if your guests are not accustomed to eating it.
  • Serving Temperature: For the best experience, serve the sourdough baked brie immediately out of the oven. The cheese will be perfectly molten, and the bread will be at its crispiest. While it can be reheated, the texture is unparalleled when fresh.
  • Don’t Overbake: Keep an eye on the bread during the last 10 minutes of baking. You want it golden brown and crusty, not burnt. If it’s browning too fast, tent it lightly with foil. The brie just needs to be fully melted and bubbly.
