Key Ingredients You’ll Need
Crafting the perfect copycat Applebee’s Quesadilla Burger starts with a selection of fresh, high-quality ingredients. Each component plays a crucial role in building the layers of flavor that make this dish truly special. Here’s a closer look at what you’ll need and why:
- 6-inch Tortillas: These fajita-sized flour tortillas are essential. Anything larger would overwhelm the burger patty, making it difficult to handle and eat. The smaller size ensures a perfect burger-to-tortilla ratio and a compact, flavorful bite.
- Shredded Cheddar Cheese: This cheese is used to create a crispy, cheesy base on your tortillas, adding an incredible depth of flavor and texture that mimics the quesadilla element.
- Ground Beef: We recommend using 85/15 ground beef. This blend provides an excellent balance of leanness and fat, ensuring your burger patties are juicy and flavorful without being overly greasy. The fat content contributes significantly to the richness of the burger.
- Pepper Jack Cheese: This semi-hard cheese infused with spicy jalapeño peppers adds a delightful kick and creamy texture to your burger. It melts beautifully, providing a subtle heat that complements the other flavors.
- Shredded Lettuce: Crisp, fresh shredded lettuce provides a refreshing crunch and a cool contrast to the warm, savory burger and cheese. It adds a crucial element of freshness.
- Pico de Gallo: A vibrant mix of chopped tomatoes, onions, jalapeños, cilantro, and lime juice, pico de gallo offers a burst of fresh, tangy, and slightly spicy flavor. It brightens the entire dish and adds an authentic Mexican touch.
- Cooked Bacon: Crispy, salty bacon strips are a classic burger topping for a reason. They add a smoky, savory depth and a satisfying crunch that elevates the entire experience.
- Ranch Dressing: The creamy, herb-infused base for our signature Mexi-Ranch sauce. Ranch dressing provides a cool, tangy counterpoint to the spicy and savory elements.
- Salsa: Your favorite salsa, whether mild or spicy, is blended with ranch and taco seasoning to create the irresistible Mexi-Ranch sauce. Choose a salsa that you genuinely enjoy for the best results.
- Taco Seasoning: This aromatic blend of spices is key to infusing the Mexi-Ranch sauce with an authentic Tex-Mex flavor. While store-bought works well, homemade taco seasoning offers a superior, fresher taste.
- Avocado Oil: A high-smoke-point oil perfect for baking the tortillas and cooking the burger patties. It contributes a subtle, neutral flavor that won’t overpower the other ingredients.
- Salt & Pepper: Essential seasonings to enhance the natural flavors of the ground beef and bring all the components together in perfect harmony. Don’t underestimate their importance in building a well-rounded taste.

How to Make the Best Copycat Quesadilla Burger
Creating this sensational quesadilla burger at home is an enjoyable and rewarding process. Follow these detailed steps to ensure every component comes together perfectly for an unforgettable meal.
Step 1: Prepare the Cheesy Tortilla Shells
Begin by preheating your oven to 400ºF (200ºC). This initial step is crucial for achieving the crispy, cheesy foundation of your quesadilla burger. On two large cookie sheets, evenly brush a total of 3 tablespoons of avocado oil. This not only prevents sticking but also helps the tortillas crisp up beautifully. Carefully arrange 4 tortillas on each sheet, making sure they don’t overlap. Sprinkle approximately ¼ cup of shredded cheddar cheese over each tortilla, ensuring an even layer. Transfer the baking sheets to the preheated oven and bake for 3 to 4 minutes. Watch closely for the cheese to become bubbly and golden brown, and the bottoms of the tortillas to develop a delightful crispness. Once baked, remove from the oven and set aside; these will be the ‘buns’ for your burgers.
Step 2: Craft and Cook the Juicy Burger Patties
Next, it’s time to prepare your burger patties. Divide the ground beef into 4 equal portions and gently form each into a ball. Avoid overworking the meat, as this can lead to tough burgers. Press each beef ball into a thin, round patty, aiming for approximately 5 inches in diameter. Season both sides of each patty generously with salt and freshly ground black pepper. Heat a large skillet (cast iron works wonderfully for a good sear) over high heat. Once hot, carefully place the burger patties into the skillet. Cook for 3-4 minutes on each side to achieve a beautiful crust and desired doneness. After flipping, immediately place two slices of pepper jack cheese on top of each burger patty. Cover the skillet for about 30 seconds to allow the cheese to melt into a luscious, gooey layer over the hot meat. Once melted, carefully remove the patties from the skillet and keep them warm while you prepare the remaining elements.
Step 3: Whip Up the Zesty Mexi-Ranch Sauce
This creamy, flavorful sauce is the secret weapon of your quesadilla burger, tying all the ingredients together with its tangy and slightly spicy kick. In a small bowl, combine ½ cup of ranch dressing, 3 tablespoons of your favorite salsa, and 1 tablespoon of taco seasoning. Whisk all the ingredients together until thoroughly blended and smooth. Taste and adjust the seasoning if necessary – you might want a pinch more taco seasoning for extra zest or a dash more salsa for a brighter flavor. Set this irresistible Mexi-Ranch sauce aside, ready for assembly.
Step 4: Assemble Your Masterpiece
Now for the exciting part – assembling your incredible quesadilla burgers! To ensure a balanced and delicious bite, layer your ingredients in this specific order:
- Start with one of your cheesy, crispy tortillas, cheese side facing up. This forms the flavorful base.
- Layer ¼ cup of the fresh shredded lettuce evenly over the cheesy tortilla.
- Add 2 tablespoons of vibrant pico de gallo on top of the lettuce.
- Carefully place one of the cheesy burger patties onto the pico de gallo.
- Follow with 2 slices of warm, cooked bacon, laid crosswise over the burger.
- Add 2 more tablespoons of pico de gallo for an extra burst of freshness.
- Generously drizzle 1 tablespoon of your homemade Mexi-Ranch sauce over the entire burger stack.
- Finally, crown your creation with another cheesy tortilla, cheese side down, completing the quesadilla-style ‘bun.’
Repeat this process for the remaining burgers. Serve your copycat Applebee’s Quesadilla Burgers immediately while they are warm and the cheese is still wonderfully gooey. Each bite will be a delightful combination of savory beef, crispy bacon, fresh veggies, tangy pico, spicy cheese, and creamy Mexi-Ranch sauce, all encased in a perfectly crisp, cheesy tortilla.

Quesadilla Burger Recipe Variations to Try
One of the best aspects of this homemade quesadilla burger is its incredible versatility. Don’t hesitate to get creative and customize the recipe to suit your personal tastes or dietary needs. Here are some exciting variations:
- Protein Swaps: While ground beef is classic, you can easily substitute it with ground turkey or chicken for a leaner option, or even a flavorful veggie burger patty for a vegetarian-friendly alternative. Ensure any substituted protein is properly seasoned.
- Cheese Alternatives: If pepper jack isn’t your favorite, feel free to use other cheeses like classic cheddar, Monterey Jack, colby, or even a smoky provolone for a different flavor profile. A spicy habanero cheddar would amplify the heat!
- Spice It Up: For those who love extra heat, add thinly sliced fresh jalapeños, a dash of your favorite hot sauce to the Mexi-Ranch, or a sprinkle of red pepper flakes to the burger patties. Incorporating a spicier salsa can also elevate the kick.
- Flavor Boosts: Experiment with different seasonings for your burger patties. A pinch of cumin, smoked paprika, or a dash of chili powder can add even more depth.
- Additional Toppings: Consider adding sliced avocado or guacamole for a creamy texture, grilled onions or bell peppers for sweetness, or even a fried egg for an extra decadent brunch burger. Sautéed mushrooms or a dollop of sour cream could also be delightful.
- Sauce Adventures: Beyond our Mexi-Ranch, explore other sauces like chipotle mayo, a creamy cilantro-lime dressing, or even a sweet and tangy BBQ sauce for a different twist.
- Mini Burgers: For appetizers or smaller appetites, use smaller tortillas and form mini patties for fun slider-sized quesadilla burgers.

Frequently Asked Questions (FAQs)
Does Applebee’s still serve the Quesadilla Burger?
Yes, as of now, most Applebee’s locations continue to feature the popular Quesadilla Burger on their menu. However, menu items can vary by location and change over time, so it’s always a good idea to check with your local restaurant if you’re planning a visit specifically for this item.
What makes the Quesadilla Burger spicy?
The primary source of the Quesadilla Burger’s signature spice comes from the pepper jack cheese, which is infused with jalapeño peppers. This cheese melts beautifully, providing a creamy texture with a noticeable, but usually not overwhelming, heat. Additionally, if you choose to top your quesadilla burger with fresh jalapeño slices, a spicier salsa in your Mexi-Ranch sauce, or even a dash of hot sauce, these elements will further enhance the spicy flavor profile, allowing you to customize the heat to your preference.
Can I prepare any components of this recipe ahead of time?
Absolutely! To streamline your cooking process, you can prepare several components in advance. The burger patties can be formed and seasoned a day ahead and stored in the refrigerator. The Mexi-Ranch sauce can also be mixed and stored in an airtight container in the fridge for up to 3-4 days. You can also shred your lettuce and prepare your pico de gallo a day in advance. Cooking the bacon ahead of time will also save you precious minutes when it’s time to assemble.
What kind of tortillas work best?
For this recipe, 6-inch flour tortillas (often labeled “fajita size”) are highly recommended. Flour tortillas are more pliable and less likely to crack than corn tortillas, making them ideal for holding all the burger ingredients securely. Their soft texture also provides a nice contrast to the crispy, cheesy exterior you achieve by baking them.

Top Tips for the Best Quesadilla Burgers
Achieving a restaurant-quality quesadilla burger at home is easier than you think with these expert tips:
The Secret to Superior Taco Seasoning: Not all taco seasoning blends are created equal. For an unparalleled depth of flavor that truly makes a difference in your Mexi-Ranch sauce and overall burger, we wholeheartedly recommend Fit Foodie Finds’ homemade taco seasoning. Its fresh, vibrant spice profile can’t be matched by store-bought packets. Consider making a large batch to keep on hand for all your Tex-Mex culinary adventures!
Choose the Right Tortillas for Success: The foundation of a great quesadilla burger is the tortilla. We strongly advise using 6-inch flour tortillas, commonly found as “fajita size.” These are pliable enough to encase your burger and toppings without tearing, and they crisp up beautifully. Corn tortillas, while delicious, tend to be more brittle and might have difficulty keeping all your flavorful ingredients in place, leading to a messier eating experience. The 6-inch size also perfectly complements the burger patty, ensuring a balanced bite.
Don’t Be Afraid to Customize: This recipe is a fantastic blueprint, but your kitchen is your playground! The beauty of cooking at home is the freedom to tailor dishes to your exact preferences. Don’t love pepper jack cheese? Swap it for classic mild cheddar, a smoky provolone, or a creamy Monterey Jack. Prefer a lighter meal? Go for turkey burgers or even a hearty black bean patty instead of ground beef. This is your Applebee’s quesadilla burger experience, so make it your own for the perfect, personalized burger or taco night!
Achieve a Perfect Burger Sear: For the most flavorful burger patties, ensure your skillet is adequately hot before adding the meat. A good sear creates a delicious crust and locks in the juices. Don’t overcrowd the pan; cook patties in batches if necessary to maintain high heat.
Freshness Matters: While convenience is great, using fresh ingredients, especially for your pico de gallo and lettuce, will significantly elevate the taste and texture of your quesadilla burger. The crispness of fresh produce makes a world of difference.
Warm Your Bacon: Even if your bacon is pre-cooked, quickly warming it in the skillet for a minute before assembly will enhance its flavor and texture, making it perfectly crispy and aromatic within your burger.
Storage and Reheating Tips
While these Applebee’s quesadilla burgers are undeniably best enjoyed fresh off the skillet, you can certainly save leftovers for another delicious meal. To store, carefully transfer your leftover quesadilla burger into an airtight container. Refrigerate it promptly, and consume within 2 days for the best quality and food safety.
When reheating, aim to bring back the crispness of the tortilla and the warmth of the fillings without drying out the burger. The best method is usually a dry skillet over medium heat, flipping occasionally, until heated through and crispy. You can also use an air fryer at around 350°F (175°C) for 5-7 minutes, or a toaster oven, for a perfectly revived burger.

Prep Time: 15 mins
Cook Time: 15 mins
Total Time: 30 mins
Servings: 4

Ingredients
- 6 tablespoons avocado oil, divided
- 8 6-inch tortillas, fajita size
- 8 oz. shredded cheddar cheese, (~2 cups)
- 1 lb. ground beef, we used 85/15
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 8 slices pepper jack cheese
- 1 cup shredded lettuce
- 1 cup fresh pico de gallo
- 8 slices cooked bacon
- ½ cup ranch dressing
- 3 tablespoons of your favorite salsa
- 1 tablespoon taco seasoning, we used homemade but you can use store bought, too
Instructions
- Preheat the oven to 400ºF (200ºC).
- Brush 3 tablespoons of avocado oil onto 2 cookie sheets and lay 4 tortillas onto each sheet.
- Sprinkle about ¼ cup of shredded cheddar onto each tortilla. Place the baking sheets in the oven and bake for 3 to 4 minutes. The cheese should be bubbling and the bottoms of the tortillas should be golden brown and crispy. Set aside for later.

- Prepare the burger patties. Separate the ground beef into 4 equal balls. Press each ground beef ball into thin patties that are about 5-inches round. Season each patty generously with salt and pepper.
- Heat a large skillet over high heat. Add the burger patties to the skillet and cook for 3-4 minutes on each side until a nice sear is achieved.

- Place 2 slices of pepper jack cheese on each burger patty and cover the skillet for 30 seconds to allow the cheese to melt into a gooey layer. Remove the patties from the skillet and keep them warm.

- If your bacon is not warm, place already cooked pieces of bacon into the skillet for about a minute before you are ready to assemble to ensure they are warm and crispy.
- Next, in a small bowl, mix together the ranch dressing, salsa, and taco seasoning to create the Mexi-Ranch sauce. Set aside.

- To assemble each quesadilla burger, lay one tortilla (cheese side up) on a clean surface. Add ¼ cup of the shredded lettuce and 2 tablespoons of pico de gallo on top of the melted cheddar. Then, add a burger patty and 2 slices of bacon onto the lettuce. Top with 2 more tablespoons of pico de gallo. Drizzle 1 tablespoon of Mexi-Ranch sauce on top of the burger, then finish by topping with another tortilla (cheese side down).

- Serve immediately while warm for the best taste and texture.

Tips & Notes
- This recipe is surprisingly quick to make, making it a fantastic and fun twist for your next Taco Tuesday or burger night!
- Adjust the spice level by choosing a milder or spicier salsa and adding more or fewer jalapeños.
- Don’t overcrowd your skillet when cooking the burgers; this ensures a good sear and even cooking.
