  • 9 oz. pre-made refrigerated cheese tortellini
  • 3 cups kale, chopped
  • 2 oz. grated parmesan, ~½ cup

Instructions

  1. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the olive oil. Once shimmering, add the ground Italian sausage and cook for 4-5 minutes, using a spatula to break it apart into small, even pieces. Cook until browned and no longer pink. Drain any excess fat if necessary.

  2. To the Dutch oven with the cooked sausage, add the diced yellow onion and minced garlic. Sauté for approximately 2 minutes, stirring occasionally, until the onions become translucent and softened, and the garlic is fragrant. Be careful not to burn the garlic.
  3. Pour in the chicken broth and the 28 oz. can of crushed tomatoes. Stir well to combine all ingredients, scraping any browned bits from the bottom of the pot. Bring the mixture to a gentle boil over medium-high heat.
