  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup reserved pasta water (optional, for adjusting sauce consistency)

Instructions

  1. Bring a large pot of generously salted water to a rolling boil over high heat. Add your chosen pasta, stirring immediately and frequently for the first minute or two to prevent it from sticking together.
  2. Cook the pasta according to package directions until it reaches an al dente texture – tender but still with a slight bite.
  3. Before draining, carefully remove about 1/2 cup of the starchy pasta water from the pot and set it aside. This will be used later to adjust the sauce consistency if needed. Strain the cooked pasta and set it aside.
  4. In the same large pot or a separate large saucepan, add the butter over medium-high heat. Allow the butter to melt and shimmer.
  5. Once the butter is melted, add the minced garlic and 1/2 teaspoon of the salt. Sauté the garlic for about 1 minute until it becomes fragrant and lightly golden, being careful not to burn it.
  6. Sprinkle the flour over the butter and garlic mixture. Whisk vigorously for about 1-2 minutes until a thick paste, known as a roux, is formed and lightly browned. This cooks out the raw flour taste.
  7. Gradually pour the milk into the pan, whisking continuously to ensure no lumps form. Continue whisking until the mixture thickens into a smooth sauce, which should take about 3-4 minutes.
